There are really only 2 main ways to fool GPS tracking systems. Why would someone want to do this? There could be a number of reasons and some of them include:

The 2 ways involve 2 concepts based on physics. The 1st is to create a signal that overpowers the GPS signal coming into the device. If that signal is interrupted some how, then the device can't get a clear signal and therefore can't record any geographic information. This method is called jamming the gps signal, and there are devices out there that will do this that fit into your car charger. You have to however know if having a device like this is legal in your area. If it isn't, then you would have to implement the 2nd way which may or may not be possible.
The 2nd way to fool a GPS tracking system is to cover the antennae on the device with a metal foil. The thing is that you have to know where the device is in your vehicle, and if you are a novice, you may have a lot of difficulty finding it. It may be worth it to you to hire a private detective to locate it for you in this case. Once you find it, if you can find the antennae for reading the incoming GPS signal, then just wrap them with wires and you are now on your way to the road to privacy.
Again, you will have to check the local laws in your area to see if it is legal to do this as well. Most private detectives will tell you "just don't get caught" with either way you choose, but if you want to stay on the up and up, then check the legality of whatever method you decide upon.
